The Three Stooges swap out a failing diner for a failing racehorse, with surprising results, in "Playing The Ponies":
Don't know who the stuntman was who actually rode the horse in the race, though Larry Fine did appear in closeups.
With racing returning to Saratoga on Thursday, this would be a good warmup.
